Alton Brown of "Good Eats" fame makes a version with a coffee can and a couple other things for smoking. Not the preserve your fish or make jerky kind of cold smoke preservation smoking, the add a smoky punch to your dinner kind of smoking say you want smoked turkey. I do that sort of smoking in a roasting pan with a charcoal briquette and wood chips, the lit keeps the chips from flaring and the roasting rack allows contact on the whole surface. There are stove top tricks if anybody is interested but they should probably appear in Vulcan's Grill. Frosty The Lucky. Quote
SLAG Posted April 10, 2021 Posted April 10, 2021 Smoking some Mandarin, Hunan, and Szechuan dishes can be done by placing the food item on a raised "grill" placed inside a wok with a top. Black tea leaves* are gently heated in that wok. Peking Duck can be cooked in that kind of set-up. A special smoker is, thus, not necessary. SLAG. * for example Lapsang Souchong tea leaves. Quote
