gearhartironwerks Posted April 6, 2013 Share Posted April 6, 2013 Chef knives are a different kettle of fish so to speak. The usage/shape parameters are markedly different from hunting/bowie blades. I found it helpful to buy some inexpensive Japanese knives with a western grind found on ebay to use as templates/thicknesses.
