Mine is a somewhat grown up version of my mother's chocolate chip cookies:(Irsrgn, these are the ones I was baking that Christmas Eve, a couple of years ago.)Chocolate Chip Cookies 1/4 cup butter 1/3 cup low-fat cream cheese 1 cup packed brown sugar 1 cup all-purpose flour 1/3 cup flour 3/4 teaspoon baking soda 1/2 teaspoon salt 1 large egg, beaten 4 tablespoons coffee liqueur 3 tablespoons instant espresso or instant coffee crystals 1 tablespoon ground coffee 1 package dark chocolate chips Preheat oven to 350 degrees F. Lightly spay baking sheets with non-stick coating. In a large mixing bowl, cream butter, cream cheese, and brown sugar on low speed with an electric mixer. Add egg and liqueur and mix on low until just combined. In a medium bowl, combine remaining ingredients. Add to butter mixture and mix by hand until combined. Portion heaping teaspoonfuls (or use a 3/4 ounce scoop) onto baking sheet about 1 1/2 inches apart. Bake for 7 minutes. Lightly flatten cookies with finger. Rotate baking sheet and bake an additional 3 minutes. Transfer to wire rack and don't burn your fingers when tasting! :mrgreen: Pam Quote Link to comment Share on other sites More sharing options...
scrapman1077 Posted December 19, 2005 Share Posted December 19, 2005 I got this from my insurance agent -- David Glass 1 cup of water 1 tsp baking soda 1 cup of sugar 1 tsp salt 1 cup of brown sugar lemon juice 4 large eggs 1 cup nuts 2 cups of dried fruit 1 bottle Jose Cuervo Tequila Sample the Cuervo to check quality. Take a large bowl, check the Cuervo again, to be sure it is of the highest quality, pour one level cup and drink. Turn on the electric mixer...Beat one cup of butter in a large fluffy bowl. Add one teaspoon of sugar...Beat again. At this point it's best to make sure the Cuervo is still OK, try another cup ... just in case. Turn off the mixerer thingy. Break 2 eggs and add to the bowl and chuck in the cup of dried fruit, Pick the fruit off floor... Mix on the turner. If the fried druit gets stuck in the beaterers just pry it loose with a drewscriver. Sample the Cuervo to check for tonsisticity. Next, sift two cups of salt, or something. Who giveshz a sheet. Check the Jose Cuervo. Now shift the lemon juice and strain your nuts. Add one table. Add a spoon of sugar, or somefink. Whatever you can find. Greash the oven. Turn the cake tin 360 degrees and try not to fall over. Don't forget to beat off the turner.
