It's a beautiful knife, and definitely above my skill level, but with Slag's very noticeable points, it might not be the best in a kitchen. How much Clorox do you put in your wipe down water in your home kitchen? I've never known a professional kitchen to not have at least a half cup per gallon in all the wash water in the cafe, restaurant, etc. Unsuitable is anything used preparing or eating food that can't be cleaned, no matter what the price tag. There's a significant difference between price and value. People who care enough to tell you something you're about to do is unsafe is pretty valuable. Of course that's just my opinion.
