BIGGUNDOCTOR Posted September 27, 2010 Share Posted September 27, 2010 I haven't seen any lined copper pots, even the ones in the high end cooking stores like Williams-Sonoma. Lots of unlined ones there. Next time I am by there I will ask to see the info (if any) that comes with them. Copper is now being used in fabrics being developed to make them odor free. No antiperspirants , or foot sprays needed. It is probably just like cautions with cast iron when cooking acidic foods like tomatoes. The mixture is then cooked long and slow until the sugars carmelize, creating that rich brown color and concentrated apple flavor. Good stuff!
