I have been playing with my forge since I went from the electric blower to the hand cranker again. With the electric blower a depth of 6" was fine but unless I keep cranking, and then crank really hard, 2" is better for me. I get the centre of the fire a bit above the table so its easy to put material into the correct part of the fire by just laying is on the table.

Goes to show there is no "correct" answer as it will vary with your fuel and type of ventillation.
